5 Skewer Recipes for Your Next BBQ (That Everyone Will Love)
If you’re planning a summer cookout, these 5 skewer recipes for your next BBQ are must-tries. Each one brings its own bold, delicious flavor–from smoky and spicy to sweet and savory. I’ve personally tested all of them (with plenty of taste-testing help from Dakota), and they’ve quickly become some of our summer grilling favorites.
We’re not seasoned grillers–yet! Before this, we’d only fired up the grill a handful of times. But this year, one of our biggest goals is to make the most of it. These skewers have definitely been some of our proudest grilling moments so far.
We served the full lineup at a recent dinner party. Getting the quantities right was a bit of a guessing game–some batches made six skewers, others twenty–but by the end of the night, there were barely any left.
What made it even more fun was building pita pockets with everything: layering in grilled meat, fresh feta, onions, zucchini—you name it. These skewers aren’t just crowd-pleasers–they’re a creative, hands-on way to turn a BBQ into a feast.

Smoked Chorizo & Onion Skewer Recipe
Equipment
- 6 6 inch bamboo skewers
Ingredients
- 2 smoke chorizo sausages
- 1/2 red onion
Instructions
- Soak the Skewers: Soak wooden skewers in water for a few hours. This helps prevent burning on the grill.
- Prep the Ingredients: Cut smoked chorizo on the diagonal into thick oval slices. Slice the onion into similarly sized squares for even cooking.
- Assemble the Skewers: Thread the chorizo onto the skewers, placing 2–3 onion pieces between each slice of sausage.
- Grill: Heat your grill to high. Grill the skewers until you see those iconic char marks. Since the chorizo is already smoked, you’re just heating it through and charring the edges.
- Serve & Enjoy: Serve hot on their own or pair with warm pita and grilled peppers for a simple, flavorful meal.

Ground Lamb & Harissa Skewer Recipe
Ingredients
- 1/2 lb ground lamb
- 1 1/2 tsp harissa powder
- 1/2 shallot
- 1 garlic clove
- 1/8 tsp salt
- 1/8 tsp ground pepper
Instructions
- Soak the Skewers: Soak wooden skewers in water for at least a few hours. This helps prevent burning and keeps the meat from sticking.
- Prep the Aromatics: Finely mince the garlic and scallion until almost paste-like for even flavor throughout the mixture.
- Mix the Meat: In a medium bowl, combine the ground lamb, harissa powder, minced garlic, scallion, salt, and pepper. Mix until everything is evenly incorporated—don't overwork it.
- Shape the Skewers: Divide the mixture into 6 equal portions. Roll each into a sausage shape and insert a skewer through the center. Gently flatten the meat on both sides so it holds its shape.
- Grill: Preheat your grill to high heat. Grill the skewers for about 5 minutes on each side, or until nicely browned and cooked through. You don’t need oil, but if you're worried about sticking, brush each side lightly with olive oil while cooking.
- Serve & Enjoy: Serve hot with fresh pita and your favorite accompaniments—think tzatziki, chopped salad, or pickled onions.

Cilantro Lime Steak & Mango Skewer Recipe
Equipment
- 15 6 inch bamboo skewers
Ingredients
- 1 lb sirloin steak
- 1/2 cup fresh cilantro
- 1 lime
- 1 mango
Instructions
- Soak the Skewers: Soak wooden skewers in water for at least 30 minutes to prevent burning on the grill.
- Prep the Steak: Cut steak into 1-inch cubes and place them in a Tupperware or sealable container.
- Add Marinade: Zest and juice one lime, then add both to the container.
- Add Cilantro & Marinate: Finely chop a handful of cilantro and mix it in with the steak. Stir well to coat. Cover and refrigerate for at least 4 hours to let the flavors develop.
- Prep the Mango: Cut the mango into 1-inch chunks. Use a semi-firm mango so the pieces hold their shape on the grill.
- Bring Steak to Room Temp: Remove the steak from the fridge about 20–30 minutes before grilling to let it come closer to room temperature.
- Assemble Skewers: Alternate steak and mango chunks on each skewer, pressing pieces together gently to hold.
- Grill: Heat your grill to high. Grill skewers for about 2 minutes per side, or until the steak is nicely seared and cooked to your liking.
- Serve & Enjoy: Serve hot, as-is or with a squeeze of extra lime. These are perfect with rice, grilled veggies, or wrapped in warm pita.

Honey & Miso Chicken Skewer Recipe
Equipment
- 10 6 inch bamboo skewers
Ingredients
- 1 lb chicken breasts two skinless, boneless chicken breasts
- 2.5 tbsp miso paste
- 2.5 tbsp honey
- 1 tsp garlic powder
- 1 tsp onion powder
Instructions
- Soak the Skewers: Soak wooden skewers in water for a few hours to prevent burning on the grill.
- Prep the Chicken: Cut chicken breasts into 1-inch cubes and set aside.
- Make the Marinade: In a container, combine miso paste, honey, garlic powder, and onion powder. Stir until it forms a thick, smooth paste.
- Marinate: Add the chicken pieces to the marinade and mix well until fully coated. Cover and refrigerate for at least 4 hours to let the flavors soak in.
- Assemble the Skewers: Thread the marinated chicken tightly onto each skewer, packing the pieces close together. Repeat until all the chicken is used.
- Grill: Preheat your grill to high heat. Grill skewers for about 10 minutes, turning occasionally, until fully cooked and beautifully charred on the outside.
- Serve & Enjoy: Serve hot off the grill. These skewers are sweet, savory, and perfect on their own or with rice, noodles, or fresh salad.

BBQ Pork & Pineapple Skewer Recipe
Equipment
- 13 6 inch bamboo skewers
Ingredients
- 2 lb pork boneless ribs
- 3 tbsp bbq sauce Whatever you have on hand
- 1/8 tsp salt
- .91 lb pre-cut pineapple slices from your local supermarket or feel free to cut the pineapple yourself
Instructions
- Soak the Skewers: Soak wooden skewers in water for a few hours to prevent them from burning on the grill.
- Prep the Pork:Cut pork into chunky 1.5-inch pieces. You want hearty bites for this recipe.
- Marinate: Place the pork in a container and sprinkle with salt to help draw out some of the fat. Add BBQ sauce and mix until the pork is well coated. Cover and refrigerate for at least 4 hours to marinate.
- Prep the Pineapple: If your pineapple chunks are large, cut them in half to match the size of the pork pieces. Then assemble the skewers, alternating between pork and pineapple.
- Grill: Start by grilling over high heat to sear and caramelize both sides. Then reduce the heat to low or move the skewers to a higher rack. Let them cook for 15–20 minutes, allowing the pork to tenderize and the fat to render.
- Serve & Enjoy: Enjoy hot off the grill. These skewers are sweet, smoky, and perfect with grilled veggies or fresh slaw.
