Flavor-Packed Ground Lamb and Harissa Skewer Recipe – A Summer Grilling Favorite
If you’re looking for a vibrant and delicious grilling idea, this ground lamb and harissa skewer recipe is a must-try. It was the standout dish at our recent dinner party—everyone raved about the rich flavor of the lamb paired with the spicy kick of harissa. Honestly, how can you go wrong with lamb and fiery spices sizzling over the grill?
The best part? It’s super easy to make. I simply combined all the ingredients in a bowl, mixed them by hand, and shaped them onto skewers. We grilled them without any added oil, and despite my initial concern about sticking, the natural fat from the lamb worked like a charm, giving the skewers a perfect char without any hassle.
These lamb and harissa skewers were amazing tucked into warm pita pockets. We loaded them up with feta cheese, crisp cucumbers, grilled zucchini, charred peppers, and a generous dollop of creamy tzatziki. The flavor of the lamb and harissa still shone through all the toppings–spicy, savory, and totally satisfying.
It was a true team effort–Dakota manned the grill while I prepped the sides and assembled the skewers. We’re already planning to make this again as part of our summer BBQ lineup. Whether you’re hosting a backyard gathering or just looking for something exciting to throw on the grill, this ground lamb and harissa skewer recipe is one you’ll want to keep on repeat.

Ground Lamb & Harissa Skewer Recipe
Ingredients
- 1/2 lb ground lamb
- 1 1/2 tsp harissa powder
- 1/2 shallot
- 1 garlic clove
- 1/8 tsp salt
- 1/8 tsp ground pepper
Instructions
- Soak the Skewers: Soak wooden skewers in water for at least a few hours. This helps prevent burning and keeps the meat from sticking.
- Prep the Aromatics: Finely mince the garlic and scallion until almost paste-like for even flavor throughout the mixture.
- Mix the Meat: In a medium bowl, combine the ground lamb, harissa powder, minced garlic, scallion, salt, and pepper. Mix until everything is evenly incorporated—don't overwork it.
- Shape the Skewers: Divide the mixture into 6 equal portions. Roll each into a sausage shape and insert a skewer through the center. Gently flatten the meat on both sides so it holds its shape.
- Grill: Preheat your grill to high heat. Grill the skewers for about 5 minutes on each side, or until nicely browned and cooked through. You don’t need oil, but if you're worried about sticking, brush each side lightly with olive oil while cooking.
- Serve & Enjoy: Serve hot with fresh pita and your favorite accompaniments—think tzatziki, chopped salad, or pickled onions.
