This honey and miso chicken skewer recipe was hands-down the crowd favorite at our skewer-themed dinner party–and that’s not just me saying it. One of our guests, a food scientist, told me it was the best flavor combo of the night. If that’s not expert approval, I don’t know what is.
What makes these skewers so irresistible? It’s all about the balance. The miso brings deep, umami-rich savoriness, while the honey adds a touch of sweetness that caramelizes beautifully over an open flame. When those flavors hit the grill together, the result is pure magic–charred edges, juicy chicken, and a glaze that’s sticky in all the right ways.
Miso paste has quietly become one of my pantry MVPs. It’s incredibly versatile, from quick soups to marinades, and adds that little “something extra” to any protein. For this recipe, it paired perfectly with honey to create a glaze that transformed simple chicken into a next-level skewer.
Big shoutout to Dakota for absolutely nailing the grill time–each skewer was cooked to juicy, golden perfection. And yes, Indy (our resident chicken lover) may or may not have gotten a tiny taste.

Honey & Miso Chicken Skewer Recipe
Equipment
- 10 6 inch bamboo skewers
Ingredients
- 1 lb chicken breasts two skinless, boneless chicken breasts
- 2.5 tbsp miso paste
- 2.5 tbsp honey
- 1 tsp garlic powder
- 1 tsp onion powder
Instructions
- Soak the Skewers: Soak wooden skewers in water for a few hours to prevent burning on the grill.
- Prep the Chicken: Cut chicken breasts into 1-inch cubes and set aside.
- Make the Marinade: In a container, combine miso paste, honey, garlic powder, and onion powder. Stir until it forms a thick, smooth paste.
- Marinate: Add the chicken pieces to the marinade and mix well until fully coated. Cover and refrigerate for at least 4 hours to let the flavors soak in.
- Assemble the Skewers: Thread the marinated chicken tightly onto each skewer, packing the pieces close together. Repeat until all the chicken is used.
- Grill: Preheat your grill to high heat. Grill skewers for about 10 minutes, turning occasionally, until fully cooked and beautifully charred on the outside.
- Serve & Enjoy: Serve hot off the grill. These skewers are sweet, savory, and perfect on their own or with rice, noodles, or fresh salad.
