Instructions
Soak the Skewers: Soak wooden skewers in water for a few hours. This helps prevent burning on the grill.
Prep the Ingredients: Cut smoked chorizo on the diagonal into thick oval slices. Slice the onion into similarly sized squares for even cooking.
Assemble the Skewers: Thread the chorizo onto the skewers, placing 2–3 onion pieces between each slice of sausage.
Grill: Heat your grill to high. Grill the skewers until you see those iconic char marks. Since the chorizo is already smoked, you’re just heating it through and charring the edges.
