Smoky, Simple, and Satisfying: Chorizo and Onion Skewer Recipe
If you’re looking for a no-fuss dish that delivers big on flavor, this smoked chorizo and onion skewer recipe is the one to try. It’s ridiculously easy to prep and even more satisfying to eat–especially when hot off the grill.
The secret to keeping it simple? Smoked chorizo sausage. Grabbing it pre-cooked from the butcher means all you have to focus on is getting those gorgeous grill marks and letting the natural fats sizzle into the onions. The result is caramelized, smoky perfection in just minutes.
Honestly, I skipped the pita, sauces, and sides entirely for this one. I went straight skewer-to-mouth and loved every second. The spicy, juicy chorizo paired with the sweet, charred onions is truly a next-level flavor combo.
Dakota, our designated grill master, was especially excited for this round. He’s a red onion fanatic, so this skewer was right up his alley. That said, you could experiment with different varieties of onions, or even try leeks for a milder twist and an extra touch of visual appeal.
Whether you’re throwing together a last-minute BBQ or want a fun, flavorful bite without a lot of prep, this smoked chorizo and onion skewer recipe is a guaranteed crowd-pleaser.

Smoked Chorizo & Onion Skewer Recipe
Equipment
- 6 6 inch bamboo skewers
Ingredients
- 2 smoke chorizo sausages
- 1/2 red onion
Instructions
- Soak the Skewers: Soak wooden skewers in water for a few hours. This helps prevent burning on the grill.
- Prep the Ingredients: Cut smoked chorizo on the diagonal into thick oval slices. Slice the onion into similarly sized squares for even cooking.
- Assemble the Skewers: Thread the chorizo onto the skewers, placing 2–3 onion pieces between each slice of sausage.
- Grill: Heat your grill to high. Grill the skewers until you see those iconic char marks. Since the chorizo is already smoked, you’re just heating it through and charring the edges.
- Serve & Enjoy: Serve hot on their own or pair with warm pita and grilled peppers for a simple, flavorful meal.
