Ingredients
  

  • 1/2 lb ground lamb
  • 1 1/2 tsp harissa powder
  • 1/2 shallot
  • 1 garlic clove
  • 1/8 tsp salt
  • 1/8 tsp ground pepper

Instructions
 

  • Soak the Skewers: Soak wooden skewers in water for at least a few hours. This helps prevent burning and keeps the meat from sticking.
  • Prep the Aromatics: Finely mince the garlic and scallion until almost paste-like for even flavor throughout the mixture.
  • Mix the Meat: In a medium bowl, combine the ground lamb, harissa powder, minced garlic, scallion, salt, and pepper. Mix until everything is evenly incorporated—don't overwork it.
  • Shape the Skewers: Divide the mixture into 6 equal portions. Roll each into a sausage shape and insert a skewer through the center. Gently flatten the meat on both sides so it holds its shape.
  • Grill: Preheat your grill to high heat. Grill the skewers for about 5 minutes on each side, or until nicely browned and cooked through. You don’t need oil, but if you're worried about sticking, brush each side lightly with olive oil while cooking.
  • Serve & Enjoy: Serve hot with fresh pita and your favorite accompaniments—think tzatziki, chopped salad, or pickled onions.
