8ozgoat cheese
2lbsmedjool datesI got the ones that still had the pits in them
16ozbacon stripsUse whatever your preference is. I find the thinner the better for the perfect crisp
Instructions
Preheat your oven to 375°F (190°C) and line a large baking tray with parchment paper or aluminum foil for easy cleanup.
Prepare the dates by slicing each one lengthwise down the center. Gently open them up and remove the pits by hand.
Stuff each date with about 1 to 1½ teaspoons of creamy goat cheese. Don’t overfill—just enough to balance the sweetness of the date with the tangy cheese.
Cut the bacon strips into thirds. Wrap a piece around each stuffed date and secure it with a toothpick.
Arrange the bacon-wrapped dates on your prepared tray. Bake for 15–20 minutes, or until the bacon is crisp and golden. (15 minutes was just right in my oven, but keep an eye on them—oven times may vary!)
Transfer the hot dates to a paper towel–lined plate to soak up any extra grease. Let them cool slightly, but be sure to serve them warm for the best flavor and texture.
