Equipment

  • 1 pack of toothpicks

Ingredients

  • 8 oz goat cheese
  • 2 lbs medjool dates I got the ones that still had the pits in them
  • 16 oz bacon strips Use whatever your preference is. I find the thinner the better for the perfect crisp

Instructions

  • Preheat your oven to 375°F (190°C) and line a large baking tray with parchment paper or aluminum foil for easy cleanup.
  • Prepare the dates by slicing each one lengthwise down the center. Gently open them up and remove the pits by hand.
    Pitting the dates
  • Stuff each date with about 1 to 1½ teaspoons of creamy goat cheese. Don’t overfill—just enough to balance the sweetness of the date with the tangy cheese.
Perfectly stuffed date with goat cheese
  • Cut the bacon strips into thirds. Wrap a piece around each stuffed date and secure it with a toothpick.
Pre-oven ready bacon wrapped goat cheese dates
  • Arrange the bacon-wrapped dates on your prepared tray. Bake for 15–20 minutes, or until the bacon is crisp and golden. (15 minutes was just right in my oven, but keep an eye on them—oven times may vary!)
  • Transfer the hot dates to a paper towel–lined plate to soak up any extra grease. Let them cool slightly, but be sure to serve them warm for the best flavor and texture.
