Hooray, It’s Picnic Season and this fresh tomato, cucumber, and mozzarella bruschetta is the perfect way to celebrate!

My absolute favorite time of year is here—picnic season! To celebrate the freshness and vibrant colors of spring, I’ve got the perfect snack for you: Fresh Tomato, Cucumber, and Mozzarella Bruschetta. It’s an ideal addition to any picnic, or really, it works for snacking at any time of the day.

Simple, Fresh, and Delicious

What I love about this recipe is how rustic and beautiful it is—plus, there’s no cooking required! All you need to do is chop the ingredients into your desired bite-sized pieces. It’s a fresh, no-fuss snack that brings all the bright flavors of spring to your table.

Bruschetta with tomato cucumber and mozzarella

Ingredients:

  • 340 grams of tomatoes. I used a petite medley to give different colors
  • 2 cloves of garlic
  • 1/2 red onion
  • 1 cup of fresh mozzarella. I used pearl sized mozzarella
  • 2 tablespoons of extra virgin olive oil
  • 1/4 teaspoon of salt
  • 1/8 teaspoon of pepper
  • 1/2 tablespoon of balsamic vinegar reduction
  • 1 handful of fresh basil leaves
  • 1 baguette (really any bread from the bakery or supermarket will get the job done)

Steps:

  1. Chop the Fresh Ingredients

    Finely chop the tomatoes, garlic, onion, and mozzarella. Place them all into a medium-sized bowl for easy mixing.

  2. Season and Dress

    Add a pinch of salt, pepper, a drizzle of olive oil, and a splash of balsamic vinegar to the same bowl. Stir everything together, making sure each bite will be perfectly seasoned and balanced.

  3. Prepare the Baguette

    Slice your favorite baguette into bite-sized pieces. Arrange them on a serving platter and top with the delicious mixture.

  4. Serve and Enjoy!

    Serve immediately and enjoy this fresh, flavorful bruschetta as a perfect addition to your picnic or a quick snack anytime.
