Ingredients:

Shortbread Cookie:

  • 1 1/2 cups of all purpose flour
  • 1/2 cup of cornstarch
  • 10 tablespoons of room temperature butter
  • 1/2 teaspoon of vanilla extract
  • 1/2 cup of confectioners sugar
  • 1/4 cup of cooled down rose and earl grey tea

Topping:

  • 1/4 cup of rose and earl grey tea
  • Rose petals
  • 1/4 cup confectioners sugar

Steps to make:

Making the dough:

  1. Cream Together the Base: In a large bowl, mix the confectioners’ sugar, softened butter, and vanilla extract until smooth and silky. This creates the perfect foundation for your melt-in-your-mouth cookies.

  2. Add the Tea: Pour in your cooled-down Earl Grey and rose tea, then mix it in. Don’t worry if the mixture looks a bit watery – it will all come together in the next steps!

  3. Add the Dry Ingredients: Gradually add the flour and cornstarch to the bowl while continuing to mix. Keep stirring until the dough begins to form.

  4. Shape the Dough: Use your hands to gently knead the dough into a ball. Once it’s ready, roll it out on a floured surface to about 2 cm thick (or to your preferred thickness). Wrap the dough in cling wrap and pop it in the fridge for an hour to chill.

  5. Preheat the Oven: While the dough chills, preheat your oven to 350°F (175°C), so it’s ready for those delicious cookies!

  6. Cut Into Shapes: Once the dough is chilled, take it out of the fridge and slice it into your favorite shape. I opted for squares, but feel free to get creative! You can even poke little holes in them with a fork, toothpick, or skewer – just like those classic Walkers cookies.

  7. Bake to Perfection: Place your cookies on a baking sheet and bake them in the preheated oven for about 13 minutes. Be sure to rotate the sheet halfway through for even baking.

Creating the topping:

  1. Cool and Create the Syrup: As your cookies cool on a rack, make the finishing touch – the syrup! In a small pot, combine the remaining tea and confectioners’ sugar over low heat. Stir gently until the mixture thickens to a caramel-like consistency.

  2. Top with Syrup and Garnish: Once the syrup is ready, pour a drizzle over each cookie, then top with delicate rose petals for a gorgeous finishing touch.

  3. Serve and Enjoy: The final step is the best part! Serve your fragrant, buttery Rose and Earl Grey Shortbread Cookies with a nice cup of tea or coffee and enjoy the deliciously subtle flavors.
