These Lamb, Rosemary and Mint Sausage Rolls Really Brought A Taste of Home
Over the weekend, I wanted to make something that reminded me of home. ANZAC Day always brings a wave of nostalgia, and this year, I didn’t feel like doing a full roast. But I still craved those familiar flavors — lamb, mint, rosemary — the ones that remind me of Sunday dinners back in Australia and New Zealand.
These sausage rolls delivered all that comfort in a smaller, more casual form. They felt nostalgic but new, easy to share, and incredibly satisfying.

While I prepped and cooked, Indy stayed glued to my side. She didn’t miss a step — eyes wide, nose working overtime, clearly hoping I’d drop something. Sadly for her, nothing hit the floor. Every roll made it to the plate, and not one crumb went unaccounted for.

Lamb, Rosemary & Mint Sausage Rolls
Equipment
- Oven
- 1 large baking tray
Ingredients
- 1 Ib ground lamb
- 1 sheet puff pastry
- 4 cloves garlic
- 1 shallot
- 1 sprig rosemary
- 10 mint leaves
- 1/2 tsp pink peppercorns grounded
- 1/8 tsp salt
- 1 large egg
- 1 tsp black sesame seeds
- 3 tbsp ketchup to serve
Instructions
- Preheat your oven to 350°F (175°C) — let the warmth begin!
- Get chopping! Finely mince the garlic, shallot, rosemary, and mint. Toss them into a bowl, then season generously with salt and pepper — this is where the flavor magic starts.

- Add the ground lamb to your aromatic mix and stir it all together until everything’s evenly combined — think of it as creating the ultimate savory filling.

- Grab your puff pastry from the freezer and let it thaw until it's easy to handle. Once ready, slice the sheet into three equal sections and roll each one out into a long rectangle.

- Form your sausage rolls: Place a long strip of lamb mixture down the center of each pastry rectangle. Use a bit of water along the edges to help seal, then roll it up tightly like a snug pastry snake. Repeat for all three.

- Give them a golden glow by whisking an egg and brushing it over the top of each roll.
- Slice and style: Cut each roll into bite-sized pieces (about 2–2.5 inches long). Use a knife to score a few shallow slits across the top and sprinkle with black sesame seeds for that final touch of flair.

- Bake to perfection on a lined baking sheet for about 40 minutes, or until the pastry is golden brown and fully cooked.

- Serve hot and delicious with your favorite dipping sauce — tomato or BBQ both work wonders!
