Zucchini and carrots are a match made in culinary heaven, and grilling them takes their natural flavors to a whole new level. In this vibrant grilled zucchini and carrot salad, these veggies shine as the stars of the dish, complemented by fresh, flavorful ingredients that elevate every bite. Perfect for a light, healthy meal or a tasty side dish, this salad will have you savoring the smoky goodness of grilled vegetables like never before.

Ingredients:

  • 3 zucchinis
  • 4 small carrots
  • 1/3 cup of shelled pistachios
  • 1/4 of a red onion
  • 1/3 cup white4 vinegar
  • 1 lemon (full for zest and 1/2 for juice)
  • Parsley
  • Dill
  • 2 tablespoons of extra virgin olive oil
  • 3 garlic cloves
  • 1/4 teaspoon of coarse sea salt
  • 2 tablespoons of goat cheese

Steps:

  1. Prepare the Garlic & Olive Oil Mixture
    Mince the garlic and lightly sauté it in a pan until fragrant. Once done, transfer it to a bowl and mix with olive oil, creating a flavorful base.
  2. Marinate the Red Onion
    Thinly slice the red onion and place it in a bowl with vinegar, allowing it to soak and absorb the tangy flavor.

  3. Grill the Carrots
    Peel the carrots and slice them lengthwise into thin strips. Grill them for about 2.5 minutes on each side, or until tender with a slight char. Once grilled, add them to the garlic and olive oil mixture.

  4. Grill the Zucchini
    Slice the zucchini thinly lengthwise and grill for about 2 minutes on each side, or until you see those beautiful grill marks. Add the grilled zucchini to the bowl with the carrots, garlic, and olive oil.

  5. Add Fresh Herbs & Onions
    Finely chop the parsley and add it to the bowl. Toss in some lemon zest and the marinated red onions. Give everything a good mix to combine all the vibrant flavors.

  6. Toast the Pistachios
    Smash the pistachios and toast them in a pan until they’re golden and fragrant for an extra crunch.

  7. Assemble & Serve
    Transfer the carrot and zucchini mixture to a platter or serving bowl. Sprinkle crumbled goat cheese, fresh dill, and toasted pistachios on top. Squeeze fresh lemon juice over the dish to finish.

  8. Enjoy!
