Ingredients:

  • 1 cup of toasted pearl couscous
  • 1/2 cup of water or broth (any kind will do based on preference)
  • 4 tablespoons of extra virgin olive oil (half for cooking couscous and the other half for the dressing)
  • 2 cloves of garlic
  • 1 lemon
  • 100g of feta
  • 1 pomegranate (can purchase packet of seeds at your supermarket to make it easier)
  • 1 purple diakon radish
  • 1/2 cup of chopped Italian parsley
  • 4 chopped sprigs of mint
  • 1/3 cup of pistachios
  • 4 spring onions
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of pepper

Steps:

Making the couscous:

  1. First, heat 2 tablespoons of olive oil in a medium-sized pot over low heat. Let it warm up gently while you prepare the rest of your ingredients.

  2. Next, add the chopped garlic cloves to the pot and let them sizzle. As the garlic heats up, you’ll start to smell that irresistible, mouth-watering aroma filling your kitchen.

  3. Then, pour in water or broth, and turn up the heat until it comes to a gentle boil. This is where the magic begins!

  4. Once the water is boiling, stir in the couscous, lower the heat back to low, and cover the pot. Let it cook for about 15 minutes, allowing all the flavors to come together.

  5. After 15 minutes, remove the couscous from the heat and give it a good stir. If the couscous feels too firm, add a tablespoon or two of water, cover it again, and let it steam for another 5 minutes. Alternatively, if there’s too much liquid and it’s cooked, simply place it in the fridge to allow some of the moisture to evaporate.

  6. Meanwhile, let the couscous cool to room temperature so it’s ready for the next step.

Bringing the salad together:

  1. While waiting, finely chop the herbs to infuse a burst of freshness into the salad.

  2. Then, thinly slice the daikon and cut it into delicate matchstick-like shapes, adding a satisfying crunch to every bite.

  3. In the meantime, place the de-shelled pistachios in a sandwich bag and gently smash them into smaller pieces, creating a nice crunchy topping.

  4. Now, it’s time to bring everything together! Transfer the couscous to a large serving bowl or plate, and add the chopped herbs, crumbled feta, pomegranate seeds, pistachios, daikon matchsticks, a pinch of salt, pepper, and sliced spring onions.

  5. For the finishing touch, grate some lemon zest over the top, then slice the lemon and squeeze the juice directly into the bowl for a zesty kick.

  6. Finally, drizzle the remaining olive oil over everything, toss it all together, and enjoy the refreshing and flavorful couscous salad!
