If you’re searching for the ultimate summer grilling dish, this cilantro lime steak and mango skewer recipe checks every box. Sweet, savory, citrusy, and smoky. It’s a flavor-packed combo that tastes just like sunshine on a stick.

The magic starts with the marinade. Soaking the steak in a mix of fresh cilantro and zesty lime doesn’t just bring in that classic, crowd-pleasing flavor profile. It also helps tenderize the meat, making it juicy and grill-ready in no time.

And let’s talk about the mango. To me, mangos are summer. They remind me of my dad bringing home crates of them when I was a kid. We’d devour them in days. For this recipe, though, I intentionally chose firmer mangos instead of the soft, ripe ones. Why? They hold up beautifully on the grill, caramelizing slightly and adding just the right touch of sweetness to balance the tangy steak.

Big shoutout to Dakota for manning the grill like a pro. He got the perfect char on every skewer, and I swear I could’ve eaten 20 of them. These skewers are that good.

Whether you’re hosting a backyard BBQ or just want to shake up your dinner routine, this cilantro lime steak and mango skewer recipe is the fresh, vibrant dish you didn’t know you needed–but won’t be able to stop making.

Equipment

  • 15 6 inch bamboo skewers

Ingredients

  • 1 lb sirloin steak
  • 1/2 cup fresh cilantro
  • 1 lime
  • 1 mango

Instructions

  • Soak the Skewers: Soak wooden skewers in water for at least 30 minutes to prevent burning on the grill.
  • Prep the Steak: Cut steak into 1-inch cubes and place them in a Tupperware or sealable container.
  • Add Marinade: Zest and juice one lime, then add both to the container.
  • Add Cilantro & Marinate: Finely chop a handful of cilantro and mix it in with the steak. Stir well to coat. Cover and refrigerate for at least 4 hours to let the flavors develop.
  • Prep the Mango: Cut the mango into 1-inch chunks. Use a semi-firm mango so the pieces hold their shape on the grill.
  • Bring Steak to Room Temp: Remove the steak from the fridge about 20–30 minutes before grilling to let it come closer to room temperature.
  • Assemble Skewers: Alternate steak and mango chunks on each skewer, pressing pieces together gently to hold.
  • Grill: Heat your grill to high. Grill skewers for about 2 minutes per side, or until the steak is nicely seared and cooked to your liking.
  • Serve & Enjoy: Serve hot, as-is or with a squeeze of extra lime. These are perfect with rice, grilled veggies, or wrapped in warm pita.
