Rustic Blood Orange, Mint & Feta Salad – Bold, Fresh, and Effortlessly Elegant
This rustic Blood Orange, Mint, and Feta Salad is the kind of dish that turns heads with its striking colors and well-balanced flavors. It’s incredibly easy to make but feels refined—perfect for a quick lunch or an eye-catching side dish.
If you’ve been following my recipes, you already know how much I love using fresh herbs from the garden. There’s something so satisfying about snipping what you need, skipping the store, and actually using the herbs instead of letting half a bunch wilt in the fridge.
This salad puts juicy blood oranges front and center. Their deep, citrusy sweetness is the star of the show, balanced beautifully by the creamy feta, and the fresh, punchy kick of mint and dill. Every bite is a mix of sweet, salty, and herbaceous.
The best part? It takes just minutes to pull together. As for dressing, you’ve got options. I love it with my mint and pea dressing, or a drizzle of basil oil finished with flaky sea salt.
Ingredients:
- 3 blood oranges
- Large handful of fresh mint leaves
- 4 small Persian cucumbers
- 1 8oz feta block
- 1/4 red onion
- Small handful of fresh dill
How to Make This Blood Orange, Mint & Feta Salad

Prep the Cucumber & Feta
Slice the cucumber into thick, 1-inch rounds—keep the circular shape for a nice rustic look. Then cut the feta into even 1-inch cubes so everything feels balanced in each bite. -
Slice the Blood Oranges
Cut the blood oranges into 1-inch thick slices. Carefully trim off the peel, then cut each slice into six even wedges. The goal is to match the size of the cucumber and feta pieces for that perfect forkful. - Cut the red onion
Slice the onion horizontally to get full circles -
Assemble & Garnish
Gently toss everything together and plate it up. Scatter fresh mint leaves and fronds of dill over the top—this is where the salad starts to look as good as it tastes. -
Dress It Up
For a quick, fresh finish, drizzle with a bit of olive oil and a sprinkle of sea salt, or add a squeeze of lemon juice to brighten it up.
