Packed with bold Thai-inspired flavors, this vibrant Thai cashew dip is a true crowd-pleaser. Unlike many store-bought dips filled with complicated ingredients, this recipe keeps things simple and, most importantly, affordable — because once you start dipping, you’ll want more!

It pairs perfectly with just about any vessel, from crispy corn chips and fresh bread to your favorite store-bought crackers. Feeling adventurous? Try it with my homemade black sesame seed crackers for an extra twist!
Ingredients:
- 2 1/2 cups of whole cashews (unsalted)
- 1 bunch of cilantro
- 2 limes juiced
- 4 teaspoons of red curry paste (green curry paste works well too!)
- 3 teaspoons of fish sauce
- 1 teaspoon of salt
- 1 red pepper
- 1 cup of water

Steps:
Get ready to whip up a flavorful Thai Cashew dip that’s as easy as it is delicious!
- Add all your ingredients to a food processor and pulse until you reach your desired consistency. For that perfect texture, I recommend keeping it a bit chunky – it adds great bite!
- Taste and adjust the heat by adding more red pepper if you’re craving an extra kick.
- Spoon the dip into a small bowl and serve alongside crunchy chips, fresh celery, carrots, radishes, or whatever you love to dip!
- Any leftovers? Pop them in the fridge for later – this dip keeps surprisingly well!
